  • 4 egg whites (at room temperature)
  • 1 cup of caster sugar
  • 1 tsp of vanilla extract
  • 1 tsp of white wine vinegar
  • 2 tsp of cornflour
  • 100ml of whipped cream plus kiwifruit or berries for decoration


  1. Preheat oven to 140°C
  2. Beat egg whites in a glass or metal bowl until stiff peak forms
  3. Slowly add caster sugar beating continuously until stiff peak forms
  4. Fold vanilla extract, corn flour and white wine through the egg mixture
  5. Draw a 20cm circle on tin foil on an oven tray, then make your pav
  6. Bake for 45 minutes – 1 hour until light brown and crisp on top
  7. Turn the oven off, close the door, and leave the pavlova for 1-2 hours to cool in the oven
  8. Cover pavlova in whipped cream and decorate with fruits – serve!
