Ingredients

  • 3 large parsnips (peeled and diced)
  • 1 tbsp butter
  • 2 onions (diced)
  • 2 apples (preferably lemonade apples, peeled and diced)
  • 4 garlic cloves (or 4 tsp of crushed garlic)
  • 2cm of fresh ginger (or 2 tsp crushed ginger)
  • 1 small chilli finely chopped (or 1 tsp crushed chilli or dried chilli powder)
  • 1.5 tsp of garam masala
  • 2 tbsp sour cream or unsweetened yoghurt
  • Parsley or coriander to garnish

Method

  1. Heat butter in a large pot, then add onion and fry for 2-5 mins until transparent
  2. To the pot add garlic, ginger, chilli, garam masala and cook for 2 mins
  3. Before the onions brown add 3 cups of boiling water, salt, parsnips and apples
  4. Bring to the boil and boil for 25 mins until the parsnip is cooked
  5. Blend ingredients together, add boiling water to give desired thickness, and stir through sour cream
