Mushroom Roast Chicken

Ingredients
- 1 large free-range chicken
- 5 garlic cloves or (5 tsp crushed garlic)
- 100g butted diced and slightly melted for 10-20 sec in the microwave
- Zest from 2 lemons, juice from half a lemon
- 2 springs of thyme
- 2 onions, halved and chunky sliced
- 1 packet of mushrooms chunkily diced
- 2 tbsp of white wine
Method
- Heat oven to 180*c
- Mix together garlic, butter, lemon and thyme
- Separate the chicken skin from the breast and stuff with the butter mixture (be careful not to break the skin). Run any leftover over the chicken
- In a large casserole dish add chicken, onion, mushrooms and wine.
- Roast for 1 hour at 30-40 minutes
- Rest for 15 mins and serve with the onions, mushrooms and juices poured over the top
