Ingredients

  • 3-4 eggs
  • 1 tbsp flour
  • butter or oil for greasing
  • salt and white pepper
  • finely diced onion
  • 2 handfuls of grated cheese
  • mushrooms
  • tomatoes
  • spring onion

Method

  1. Whisk eggs and to flour slowly, so as not to get any lumps
  2. Season with salt and white pepper
  3. In a greased muffin tray, pop the fillings you would like into each compartment (this is where the kids can get involved, if you lay everything out on separate plates for them to make their own mini muffins)
  4. Now pour the egg mix on top, only 3/4 fill the individual muffin trays
  5. Now bake at 180°C for 15-20 minutes
  6. When cooled store in the fridge, and issue into the lunchboxes as you need them over a week
