Mexican Sharing Platter

Ingredients
Meat Fillings:
- Pre-cooked beef cheek
- Pre-cooked Brisket
- Mexican Mince
- Sliced capsicum, or avocado
- Finely diced cabbage
- Julienned carrot
- Shredded lettuce
- Raw grated courgette with lemon juice squeezed over top
- 1 avocado
- Juice from half a lemon or lime
- 1/2tsp cumin
- 1 1/2 Tbsp sweet chilli sauce
Method
Vegetarian or vegan alternatives:

- Fry an onion in 2 tsp of each paprika and chiptole spices and 1 Tbsp cooking oil
- Add sweetcorn kernels from one sweetcorn and for 1-2 minutes to caramelise the corn
- Then add a tin of black beans or red kidney beans along with 125g of tomato paste. Reduce the mix on medium heat (add boiling water if required) for 2-5 minutes until a thick filling forms
- Delicious
