Mandarin Chocolate Mousse

Ingredients
- 4 mandarins
- 3 shots of Cointreau
- 125g block of dark chocolate
- 200ml whipped cream
Method
- Peel mandarins and separate into segments
- Slice each segment lengthways
- Infuse mandarin in 2 shots of Cointreau, while you prepare the chocolate
- Melt chocolate slowly in a double boiler (sit a small pot in a larger pot that has boiling water, it just helps control the temperature)
- When chocolate has melted, remove from heat and slowly fold in whipped cream, then fold in another shot of Cointreau
- Pour alcoholic mandarins into a glass for serving
- Pour chocolate mousse from step 5 over the top
- Leave in a fridge to set for 1-2 hours
