Mandarin Chocolate Mousse

Ingredients

  • 4 mandarins
  • 3 shots of Cointreau
  • 125g block of dark chocolate
  • 200ml whipped cream

Method

  1. Peel mandarins and separate into segments
  2. Slice each segment lengthways
  3. Infuse mandarin in 2 shots of Cointreau, while you prepare the chocolate
  4. Melt chocolate slowly in a double boiler (sit a small pot in a larger pot that has boiling water, it just helps control the temperature)
  5. When chocolate has melted, remove from heat and slowly fold in whipped cream, then fold in another shot of Cointreau
  6. Pour alcoholic mandarins into a glass for serving
  7. Pour chocolate mousse from step 5 over the top
  8. Leave in a fridge to set for 1-2 hours
