Ingredients

  • 2 tbsp of olive oil
  • 3 tsp of curry powder
  • 1 leek (or 1 onion)
  • 1 1/2 cups of vegetable stock (or use chicken stock)
  • 140g of tomato paste
  • 2 cans of lentils (drained and rinsed)
  • 2-3 cups of chunky chopped vegetables chosen from: carrots, parsnips, yams and celery
  • Natural yoghurt, spring onion and/or basil for serving (optional)

Method

  1. Heat oil in a large soup pot and add diced leek
  2. Add curry powder and fry off for 3 minutes
  3. Add tomato paste and fry
  4. Then add vegetable stock and bring to the boil
  5. Add 4 cups of boiling water, lentils, vegetables and simmer for 15-25 mins until your vegetables are cooked how you like, and the soup is as thick as you like
  6. Done and serve with yoghurt and your favourite fresh herbs on top
