Ingredients

  • 1 tbsp olive oil
  • 2 cloves of garlic
  • 2 tsp fresh ginger
  • 1 chilli
  • 1 leek
  • 2 kumara peeled and diced into chunks
  • 1 cup of vegetable stock
  • 125g lite sour cream (or evaporated milk)
  • 1 cup of peanuts coarsely chopped and lightly roasted
  • 1 cup of shredded coconut lightly roasted
  • Rocket, mint or coriander to garnish

Method

  1. Fry garlic in 1 tbsp of olive oil until it turns brown
  2. Add ginger and chilli and fry for 2 minutes
  3. Add sliced leek and fry for 5 minutes until light brown
  4. Add vegetable stock and kumara and bring to the boil
  5. Boil kumara until it softens. Add boiling water as needed while the kumara cooks. It takes approximately 30 minutes
  6. Blend kumara into a soup and mix through sour cream
  7. Add peanuts and coconut on top and serve with a leafy herb on top
