Ingredients
- 1 tbsp olive oil
- 2 cloves of garlic
- 2 tsp fresh ginger
- 1 chilli
- 1 leek
- 2 kumara peeled and diced into chunks
- 1 cup of vegetable stock
- 125g lite sour cream (or evaporated milk)
- 1 cup of peanuts coarsely chopped and lightly roasted
- 1 cup of shredded coconut lightly roasted
- Rocket, mint or coriander to garnish
Method
- Fry garlic in 1 tbsp of olive oil until it turns brown
- Add ginger and chilli and fry for 2 minutes
- Add sliced leek and fry for 5 minutes until light brown
- Add vegetable stock and kumara and bring to the boil
- Boil kumara until it softens. Add boiling water as needed while the kumara cooks. It takes approximately 30 minutes
- Blend kumara into a soup and mix through sour cream
- Add peanuts and coconut on top and serve with a leafy herb on top
