Ingredients

  • 120-180g of fresh rocket
  • 2 large gold kumara
  • Salt, pepper and oil
  • 125g of toasted walnuts
  • 1 packet of prosciutto
Dressing
  • 1 tbsp of sour cream
  • 1 tbsp of mayonnaise
  • 1 tsp of lemon juice
  • 1 tsp of dijon mustard

Method

  1. Wash and slice kumara into chunky wedges. In a microwave dish, microwave for 10 minutes on high (you don’t need any water)
  2. On a roasting tray lay kumara and lightly coat in oil. Season with salt and pepper
  3. Put kumara onto roast for 15-20 minutes until crisped and browned
  4. Meanwhile, wash salad leaves and mix together dressing ingredients
  5. In a dry fry pan toast walnuts for 2-5 minutes until browned
  6. When kumara is cooked, assemble your salad with rocket, kumara, prosciutto and walnuts on top. Topped with dressing, mmmm
