Kumara Salad

Ingredients
- 120-180g of fresh rocket
- 2 large gold kumara
- Salt, pepper and oil
- 125g of toasted walnuts
- 1 packet of prosciutto
- 1 tbsp of sour cream
- 1 tbsp of mayonnaise
- 1 tsp of lemon juice
- 1 tsp of dijon mustard
Method
- Wash and slice kumara into chunky wedges. In a microwave dish, microwave for 10 minutes on high (you don’t need any water)
- On a roasting tray lay kumara and lightly coat in oil. Season with salt and pepper
- Put kumara onto roast for 15-20 minutes until crisped and browned
- Meanwhile, wash salad leaves and mix together dressing ingredients
- In a dry fry pan toast walnuts for 2-5 minutes until browned
- When kumara is cooked, assemble your salad with rocket, kumara, prosciutto and walnuts on top. Topped with dressing, mmmm
