Kumara Quinoa

  • 2 kumara
  • 1 oxo cube
  • 1 cup of dried quinoa
  • Juice from 1 lemon
  • 1 egg
  • 1 cup of flour
  • 1 packet of smoked salmon
  • Rocket
  • Cauliflower
  • 1 tbsp of cream cheese


  1. Peel and dice kumara and put onto cook until soft, drain
  2. Meanwhile, dice cauliflower and putt onto cook, boil for 10-15 minutes
  3. Add quinoa to 2 cups of water, lemon juice and bring to a boil. Cook for 15-20 minutes until cooked through, remove from heat and set aside
  4. Mix the quinoa, kumara and egg together, with flour into a batter that you can form fritters from and make 4-6 fritters.
  5. Fry in oil until browned from each side
  6. Remove cauliflower from heat, drain, blend and mix through cream cheese
  7. Serve fritters with rocket, fresh smoked salmon and cauliflower puree like in the image
