Ingredients

Base
  • 1 packet of malt biscuits
  • 100g of butter
Filling
  • 3 kumara
  • 1 cup of brown sugar
  • 1 tub of mascarpone cheese (125g)
  • 2 large eggs
  • 1/2 tsp of ground cinnamon
  • 1/4 tsp of ground nutmeg
  • Juice from 1 lemon
  • 1 tsp vanilla extract

Method

Prepare Base
  • Crush malt biscuits into a fine grain
  • Rub in butter and push tightly into the base & sides of a 20.5cm spring form pan using the back of a spoon, refrigerate for 20-30 minutes
  1. Peel and chop kumara and boil for 30 minutes
  2. Boil until soft and set aside to cool
  3. Blend kumara and brown sugar together
  4. Mix in mascarpone, eggs, cinnamon, nutmeg , lemon and vanilla extract
  5. Pour into the prepared base and bake at 180°C for 50 minutes
  6. Remove from the oven, leave to cool and set (approx 1 hour)
  7. Serve with whipped cream
