  • 3 kumara
  • 1/2 tsp of cooking oil
  • 2 tsp of natural unsweetened yoghurt
  • 1 egg
  • 2 tsp of curry powder
  • 1 can of creamed sweetcorn


  1. Lightly coat kumara into oil and put onto roast at 180c for 40 minutes
  2. Let kumara cool a little and scoop out the centres
  3. Mash Kumara centres in a bowl and mix in egg, yoghurt and curry powder
  4. Make patties
  5. In a frypan heat 1 tbsp of cooking oil and fry each pattie until browned
  6. Meanwhile heat sweetcorn in a pot
  7. Serve kumara shells with cooked corn inside and patties with a dash of tomato relish…Mmmmm.
