Ingredients
- 3 kumara
- 1/2 tsp of cooking oil
- 2 tsp of natural unsweetened yoghurt
- 1 egg
- 2 tsp of curry powder
- 1 can of creamed sweetcorn
Method
- Lightly coat kumara into oil and put onto roast at 180c for 40 minutes
- Let kumara cool a little and scoop out the centres
- Mash Kumara centres in a bowl and mix in egg, yoghurt and curry powder
- Make patties
- In a frypan heat 1 tbsp of cooking oil and fry each pattie until browned
- Meanwhile heat sweetcorn in a pot
- Serve kumara shells with cooked corn inside and patties with a dash of tomato relish…Mmmmm.
