  • 2 kumara (preferably orange)
  • 1 red onion
  • 2 tbsp of curry powder
  • 2 tsp of crushed chilli
  • 2 tbsp of cooking oil
  • 1 can of coconut milk
  • Half a pack of spinach
  • Salt to taste


  1. Fry onion in cooking oil with chilli until browned
  2. Add curry powder and brown off for 30 secs
  3. Add peeled and diced kumara, coconut milk and 1-2 cups of boiling water
  4. Bring to the boil and cook until kumara is soft
  5. Add shredded spinach leaves and boil for a further 6 minutes
  6. Add water and salt as required
  7. Blend before serving. I love mine blended into a smooth creamy soup, mmm
