Kumara and spinach soup

Ingredients
- 2 kumara (preferably orange)
- 1 red onion
- 2 tbsp of curry powder
- 2 tsp of crushed chilli
- 2 tbsp of cooking oil
- 1 can of coconut milk
- Half a pack of spinach
- Salt to taste
Method
- Fry onion in cooking oil with chilli until browned
- Add curry powder and brown off for 30 secs
- Add peeled and diced kumara, coconut milk and 1-2 cups of boiling water
- Bring to the boil and cook until kumara is soft
- Add shredded spinach leaves and boil for a further 6 minutes
- Add water and salt as required
- Blend before serving. I love mine blended into a smooth creamy soup, mmm
