Ingredients

  • 4-5 grated carrots (peeled and grated or shaved)
  • 1 cucumber (grated)
  • 1 kohlrabi (peeled and grated or shaved)
  • 1 tbsp cumin seeds
  • A handful of fresh parsley, dill or coriander (optional)
Dressing
  • 6 tbsp peanut oil
  • Juice from 1 lemon
  • 1 tsp Dijon mustard
  • 1 tbsp honey

Method

  1. Prepare vegetables
  2. Toss carrots, cucumber, kohlrabi together
  3. Make dressing ingredients by whisking togetehr until a smooth creamy sauce forms
  4. Dress the salad ingredients
  5. Sprinkle parsley and cumin seeds on top, and perhaps cracked black pepper
  6. Serve immediately as is or with a dollop of natural yoghurt. Store in the fridge, it lasts well as the flavours absorb, making it perfect for falafel wraps
