Kohlrabi Salad

Ingredients
- 4-5 grated carrots (peeled and grated or shaved)
- 1 cucumber (grated)
- 1 kohlrabi (peeled and grated or shaved)
- 1 tbsp cumin seeds
- A handful of fresh parsley, dill or coriander (optional)
- 6 tbsp peanut oil
- Juice from 1 lemon
- 1 tsp Dijon mustard
- 1 tbsp honey
Method
- Prepare vegetables
- Toss carrots, cucumber, kohlrabi together
- Make dressing ingredients by whisking togetehr until a smooth creamy sauce forms
- Dress the salad ingredients
- Sprinkle parsley and cumin seeds on top, and perhaps cracked black pepper
- Serve immediately as is or with a dollop of natural yoghurt. Store in the fridge, it lasts well as the flavours absorb, making it perfect for falafel wraps
