Healthy Rhubarb and Apple Pie

Ingredients
- 1 sheet of short crust pastry(not so healthy but spread it out!)
- 3 apples(I love granny smith or lemonade, but any will do) sliced thinly
- 3-4 stalks of rhubarb, chopped into 2cm chunks
- Juice from 1 lemon
- 1/4 tsp of cinnamon
- 2-3 tbsp of sugar (or use honey as an alternative)
- 2 tbsp cornflour
- A handful of pecan nuts for topping
Method
- In a pot mix apple slices, rhubarb, lemon juice, cinnamon, sugar, 1 cup of water and cornflour
- Simmer for approximately 10 minutes, add more water if required, and cook until rhubarb is soft, blend into a smooth paste
- Meanwhile line a greased pie dish with pastry, add rhubarb mix, and make a lattice layer on top. Top with pecans
- Bake for 30 minutes until golden brown and cooked
- Serve with cream or natural yoghurt for a healthier option
