Healthy Rhubarb and Apple Pie

Ingredients

  • 1 sheet of short crust pastry(not so healthy but spread it out!)
  • 3 apples(I love granny smith or lemonade, but any will do) sliced thinly
  • 3-4 stalks of rhubarb, chopped into 2cm chunks
  • Juice from 1 lemon
  • 1/4 tsp of cinnamon
  • 2-3 tbsp of sugar (or use honey as an alternative)
  • 2 tbsp cornflour
  • A handful of pecan nuts for topping

Method

  1. In a pot mix apple slices, rhubarb, lemon juice, cinnamon, sugar, 1 cup of water and cornflour
  2. Simmer for approximately 10 minutes, add more water if required, and cook until rhubarb is soft, blend into a smooth paste
  3. Meanwhile line a greased pie dish with pastry, add rhubarb mix, and make a lattice layer on top. Top with pecans
  4. Bake for 30 minutes until golden brown and cooked
  5. Serve with cream or natural yoghurt for a healthier option
