Layer 1
  • 2 egg yolks
  • 100g of butter
  • 2 cups of Healtheries GF baking mix
  • 1/4 cup of caster sugar
  • 1 tsp vanilla essence
Layer 2
  • 50g of butter
  • 1 pineapple
  • 1/3 cup of cornflour
  • 2 egg yolks
Layer 3
  • 4 egg whites
  • 1/4 cup of sugar
  • 2 cups of coconut flakes


  1. Heat oven to 180°C
  2. Make layer 1 and crumble it with your hand like you might a scone mix to make breadcrumbs
  3. Press into a greased 24cm cake tray and bake at 180°C for 15 minutes
  4. Meanwhile blend pineapple in a smooth juice
  5. In a pot over low heat, mix together all layer 2 ingredients, including blended pineapple. Whisk/stir continuously until a thick paste forms
  6. Beat egg whites with sugar until stiff peaks form and fold in coconut
  7. Spread layer 2 and 3 over the base to make a slice
  8. Bake for 25 minutes. Serve immediately or chill overnight
