Gluten free Pineapple Slice

Ingredients
Layer 1
- 2 egg yolks
- 100g of butter
- 2 cups of Healtheries GF baking mix
- 1/4 cup of caster sugar
- 1 tsp vanilla essence
- 50g of butter
- 1 pineapple
- 1/3 cup of cornflour
- 2 egg yolks
- 4 egg whites
- 1/4 cup of sugar
- 2 cups of coconut flakes
Method
- Heat oven to 180°C
- Make layer 1 and crumble it with your hand like you might a scone mix to make breadcrumbs
- Press into a greased 24cm cake tray and bake at 180°C for 15 minutes
- Meanwhile blend pineapple in a smooth juice
- In a pot over low heat, mix together all layer 2 ingredients, including blended pineapple. Whisk/stir continuously until a thick paste forms
- Beat egg whites with sugar until stiff peaks form and fold in coconut
- Spread layer 2 and 3 over the base to make a slice
- Bake for 25 minutes. Serve immediately or chill overnight
