Ingredients

  • 4 potatoes
  • 1 Tbsp of olive oil
  • 1 onion
  • 1 clove of garlic (or 1 tsp of crushed garlic)
  • 1 packet of spinach
  • 1/2 packet of mushrooms
  • 2-3 tomatoes
  • A handful of grated tasty cheese

Method

1. Peel potato and finely slice. I use a processor
2. Lay potatoes out in a flat layer in a pie dish and put onto bake for 45 minutes
3. Heat olive oil in a frypan and fry garlic and onion until onion turns light brown
4. Add spinach and fry (wilt) for 2 minutes until it completely reduces down in size
5. Lay the spinach layer on the semi-cooked potatoes
6. Slice mushrooms and lay on spinach
7. In a small bowl dissolve cornflour in milk
8. In a larger mixing bowl whisk eggs, milk & cornflour and mix in thyme, salt & pepper
9. Pour egg mixture over the vegetables, it should just come to the top of the dish
10. Lay tomatoes and cheese on top
11. Bake for a further 45 mins at 180°C, until cooked through. Serve hot or cold.
