1. Simply season in your favourite dry spices and fry for 2 minutes. If it is the skin on like our amazing Kahawai this week, fry skin down first.
2. Delicious served with a coconut spinach sauce
3. Fry 1 onion until browned, wilt a bag of spinach until soft, add a pinch of salt and a can of coconut milk, and blend into a smooth creamy and rich sauce.
