French Onion Soup

Ingredients
- 5-6 chopped onions or 10-12 small onions
- 50g butter
- 1 tbsp of sugar
- 2 cloves of fresh crushed garlic
- 4 cups of beef stock
- 1 glass of dry white wine
- Your favourite bread
- 2 tbsp olive oil
- Cracked black pepper and salt
- Tasty or parmesan cheese
Method
- In a large fry pan melt butter on low heat
- Add chopped onions, sugar and garlic and fry on medium heat until onions brown (approx. 5 minutes). Mix constantly
- Turn the heat down to a low heat and caramelise the onions for 10 minutes, until a thick brown sticky onion base forms
- Pour in stock and wine and bring to a simmer
- Leave soup to simmer for 1 hour, lid off, until a lovely soup forms (top up with boiling water if needed)
- Meanwhile prepare the cheesy croutons: break bread into chunks and cover in olive oil, salt and pepper. Grill one side. Turn over, cover the second side in cheese and grill the second side until cheese is melting on top
- Serve soup with cheesy croutons, so good
