Ingredients

  • 100g butter
  • 1/2 cup of flour
  • 2 cups of milk
  • 1 tbsp cooking oil
  • 2 cups of chicken stock
  • 6 pork sausages sliced into quarters
  • 1 diced onion
  • 4 diced carrots
  • 4 potatoes peeled and chopped
  • 1 tsp of dried thyme (or a handful of fresh)

Method

  1. Make a roux: Slowly melt butter and then add flour. Stir in flour until it absorbs all the butter. Then slowly add the milk, mixing continuously and simmering as you go until a thick sauce forms. Let the roux simmer for 1 minute at the end so the uncooked flour flavour disappears, and set aside
  2. Heat 1 tbsp of oil in a soup pot. Add onions and carrots and sauté until tender
  3. Add chicken stock, sausages, potatoes and chopped cabbage
  4. Simmer for 20 minutes (add boiling water if needed)
  5. Add the roux from step 1 and thyme and mix through until smooth
  6. Simmer for a further 20 minutes until the potatoes are cooked through. Keep your eye on it and add boiling water if it starts sticking or drying out
