Fluffy Carrot Cake

Ingredients
- 4 medium carrots
- 1/4 cups of sugar
- 50g butter
- 2 eggs
- 3 tbsp flour
- 1 tsp vanilla essence
Method
- Cook carrots and blend
- Preheat oven to 180°C
- To carrots, add butter, sugar, flour, and vanilla essence
- Separate egg yolks and whites. Beat yolks until creamy. Beat whites until peaks form
- Fold yolks, whites and carrot together
- 3/4 fill 5 ramekins
- Bake for 20-30 minutes until risen
- Serve immediately with vanilla ice cream or cream cheese icing
