Fluffy Carrot Cake

  • 4 medium carrots
  • 1/4 cups of sugar
  • 50g butter
  • 2 eggs
  • 3 tbsp flour
  • 1 tsp vanilla essence


  1. Cook carrots and blend
  2. Preheat oven to 180°C
  3. To carrots, add butter, sugar, flour, and vanilla essence
  4. Separate egg yolks and whites. Beat yolks until creamy. Beat whites until peaks form
  5. Fold yolks, whites and carrot together
  6. 3/4 fill 5 ramekins
  7. Bake for 20-30 minutes until risen
  8. Serve immediately with vanilla ice cream or cream cheese icing
