Cos lettuce with balsamic strawberries
  • 2 baby cos lettuces
  • 1-2 punnets of strawberries
  • 2 tbsp of balsamic vinegar
  • 1/2 cup of olive oil
  • Havarti cheese (camembert or brie)
  • Pine nuts
  • Mint to garnish
Mini greek salad
  • 1 packet of mini peppers
  • 200g of feta cheese
  • 1 packet of sweet tomatoes or 4-5 vine ripened tomatoes
  • Olive oil
  • Fresh oregano to garnish


Cos lettuce with balsamic strawberries
  1. Slice strawberries into quarters and marinate in balsamic vinegar for half an hour
  2. Drain off balsamic vinegar and keep
  3. Lay out cos lettuce and add: strawberries, cheese (tear with your hands)
  4. Toast pine nuts and sprinkle in each salad
  5. Whisk leftover balsamic vinegar and olive oil into a dressing
  6. Pour dressing over each salad and garnish with mint
                                                                                        Mini greek salad
  1. Slice mini peppers in half, de-seed and fill with finely chopped cheese and tomatoes
  2. Drizzle over olive oil
  3. Top with a few oregano leaves, done!
