Ingredients

  • 12 feijoas (or 1/2 cup of blended feijoas)
  • 1/4 cup sugar
  • 1 tbsp gelatine
You can add a few drops of red food colouring if you don’t like the colour below

Method

  1. Scoop out feijoa centres, blend and add sugar
  2. Simmer to dissolve sugar
  3. Dissolve gelatine in 1/2 cup of boiling water and add to feijoa mixture
  4. Simmer for a further 2-5 minutes until gelatine dissolves
  5. Pour into mini trays (max 1cm thick) and set for 1-2 hours
  6. Serve on a cheeseboard with a tasty cheddar cheese or a brie and sliced pear
