Ingredients

  • 1 eggplant
  • Olive oil
  • Salt
  • Your favourite pizza toppings: Tomato paste, prosciutto, tasty cheese, tomato (heavily tomato loaded toppings work well)

Method

  1. Slice eggplant into 1-2cm slices across
  2. Lightly coat in oil (both sides)
  3. Top with your favourite toppings
  4. Fan bake at 180°C for 10 minutes (do set your timer for this one!)
  5. Serve, with potato wedges
