Eggplant Pate

Ingredients
- 1 eggplant
- 2 tsp of olive oil
- Salt
- 1 diced onion
- 1 tsp of garlic
- 1 tbsp of tomato paste
- 2 tbsp of water
- 2 tsp of Worchester sauce
Method
- Slice eggplant widthways into 1 cm slices
- Coat in 1 tbsp of olive oil and lightly salt
- Put onto grill each side until the eggplant is cooked through (soft), approximately 5-10 minutes each side
- Remove eggplant and dice into 2cm pieces
- In a large frypan heat 1 tbsp of olive oil and fry onion and garlic until light brown
- Add: Eggplant, tomato paste, water and Worchester sauce. Stir and heat through
- Remove from heat wait to cool a little and blend into a smooth paste (add more or less water to get the consistency you like)
- Serve Immediately
