Ingredients

  • 1 eggplant
  • 2 tsp of olive oil
  • Salt
  • 1 diced onion
  • 1 tsp of garlic
  • 1 tbsp of tomato paste
  • 2 tbsp of water
  • 2 tsp of Worchester sauce

Method

  1. Slice eggplant widthways into 1 cm slices
  2. Coat in 1 tbsp of olive oil and lightly salt
  3.  Put onto grill each side until the eggplant is cooked through (soft), approximately 5-10 minutes each side
  4. Remove eggplant and dice into 2cm pieces
  5. In a large frypan heat 1 tbsp of olive oil and fry onion and garlic until light brown
  6. Add: Eggplant, tomato paste, water and Worchester sauce. Stir and heat through
  7. Remove from heat wait to cool a little and blend into a smooth paste (add more or less water to get the consistency you like)
  8. Serve Immediately
