Ingredients

Hummus style dip
  • Roasted eggplant
  • 1/4 cup of olive oil
  • 2 tbsp balsamic vinegar
  • Juice from 1 lemon
  • 1 tsp paprika
Baba Ganoush style dip
  • Roasted eggplant
  • 1/4 cup peanut oil
  • 1 tbsp tahini
  • 1 tbsp malt vinegar
  • Pinch of sugar, pinch of salt (adjust to your tastes)
  • Paprika for serving

Method

Roast eggplant
  1. Slice in half and cover in olive oil and salt and roast at 180°C for 20-30 minutes until soft in the middle
  2. Blend together
