Easy Homemade Sausage Rolls

Ingredients
- 450g Toulouse sausage mince, I used L’Authentique New Zealand Charcuterie
- 1 grated carrot
- 1 egg
- 2 tbsp flour
- 1/2 a red onion
- oil for cooking
- 2-4 sheets of prepared flakey puff pastry
Method
- Simply mix carrots, eggs, flour and sausage mince together
- Heat oil in the fry pan and fry finely diced red onion until browned
- Add mince mix and fry until mince has browned
- Cut pastry sheets into 10cm squares, lay mince in the centre and pinch up in the middle and sides (almost like a cornish pastry)
- Bake for 15 minutes at 180°C until pastry is golden brown and flakey
