Ingredients

Daikon Soup
  • 1 daikon
  • 1 apple
  • 2 celery sticks (optional)
  • Salt to taste
  • 1/2 tub of lite sour cream
  • 1 heaped tsp of honey
  • 1 tsp of Dijon mustard
Daikon Salad (This is more of a coleslaw!) (check out the video recipe on instagram, foodboxnz)
  • 3 carrots
  • 1 daikon
  • 1 can of chickpeas
  • 1 tub of lite sour cream
  • 1 heaped tsp of honey
  • 1 tsp of Dijon mustard

Method

Daikon Soup
  1. Peel and dice apple, daikon and celery. Add to a pot with 1 cup of water and bring to the boil
  2. Boil for 10-15 minutes until veggies are soft. Blend (add an extra cup of water if required)
  3. Mix sour cream, honey and Dijon mustard together and stir through soup
  4. Serve with parsley or coriander on top. So deliciously light
Daikon Salad
  1. Finely grate carrots and daikon, drain chickpeas, and add to the salad
  2. Mix sour cream, honey and Dijon mustard together and then dress your salad by tossing everything together,… Ready to serve. Delicious with roast chicken
