Curried Pumpkin Soup

Ingredients
- 1 roast pumpkin (skin removed)
- 1 tbsp cooking oil
- 1 garlic clove
- 1 onion
- 1 tbsp curry powder
- 1 cup of desiccated coconut (optional)
- 1 cup of coconut milk
- Natural unsweetened yoghurt, for serving. Alternatively sour cream, or cream could be used
Method
- Fry onion in oil until browned
- After 2-3 minutes add crushed garlic, curry powder, and coconut and fry for 30 seconds until browned off
- Add pumpkin and coconut milk and bring to the boil
- Blend and serve with a dollop of yoghurt (sour cream or cream)
