Curried Pumpkin Soup

Ingredients

  • 1 roast pumpkin (skin removed)
  • 1 tbsp cooking oil
  • 1 garlic clove
  • 1 onion
  • 1 tbsp curry powder
  • 1 cup of desiccated coconut (optional)
  • 1 cup of coconut milk
  • Natural unsweetened yoghurt, for serving.  Alternatively sour cream, or cream could be used

Method

  1. Fry onion in oil until browned
  2. After 2-3 minutes add crushed garlic, curry powder, and coconut and fry for 30 seconds until browned off
  3. Add pumpkin and coconut milk and bring to the boil
  4. Blend and serve with a dollop of yoghurt (sour cream or cream)
