Curried Fish Pie

Ingredients

  • 1 packet of white fish
  • 1 carrot
  • 1 parsnip
  • 1 beetroot
  • 400ml of coconut milk
  • 2 tbsp curry powder
  • salt and white pepper to taste
  • 2 eggs
  • 1 roast pumpkin and 3-4 roast potatoes
 

Method

  1. Grate a fried carrot, parsnip and beetroot and layout in a casserole bowl
  2.  Poach white fish in a coconut milk and curry powder, for 2-5 minutes until cooked
  3. Placed cooked fish on grated veg
  4. Dissolved 1 tbsp of cornflour in 1/4 cup of coconut milk add salt and white pepper
  5. Whisk through eggs and remove from the heat
  6. Mash together pumpkin and potatoes with 1 tbsp curry powder and 2-3 tbsp of coconut cream or milk
  7. Pour over white sauce, bake for 20-30 minutes until brown on top, enjoy.
