Crispy Homemade Potato Chips

Ingredients

  • 3 potatoes
  • 1/2 cup of olive oil
  • Salt to taste and/or your favourite stock

Method

  1. Slice potatoes as thinly as possible into 2mm slices in a food processor
  2. Pre heat oven to 180°C
  3. Heat 1cm of oil in a fry pan until bubbling. Dunk half a fry pans worth of potato slices into cool water and pat dry
  4. Fry potato slices in the fry pan until brown. Flip using tongs. Don’t add so many potatoes that the oil reduces in temperature and make sure the potato slices don’t overlap
  5. Drain on a paper towel and pat dry
  6. Repeat steps 3-5 until all the slices are fried
  7. Lay potato slices out on an oven tray and bake for 5-10 mins until crisp
  8. Eat immediately, when a little warm, straight out of the oven
