Cos and Pork Salad

Ingredients

  • 600g of pork mince
  • 2 tbsp of cooking oil (olive or canola oil)
  • 2 braeburn apples chopped into small 1cm cubes
  • 2 tbsp of sweet chilli sauce
  • 1 block of Haloumi cheese cut into small 1cm cubes
  • 1 mini Cos lettuce

Method

  1. Heat 1 tbsp of oil in a fry pan and fry mince until cooked then set aside
  2. In a separate pot reduce apple pieces with 1 cup of water until soft, 5-10 minutes (drain any remaining water)
  3. Heat 1 tbsp of oil in the fry pan add chilli sauce and Haloumi cheese and fry for 2 minutes until cheese browns on each side
  4. Return meat and apples to the fry pan and fry everything together for 2-3 minutes until hot through
  5. Separate out Cos lettuce leaves and scoop a large spoonful of pork mince into each leaf and serve on a large platter
