Ingredients

  • 2 small cucumbers
  • 2 red onions
  • 4 sweetcorn cobs
  • 3 tomatoes
  • 2 avocadoes
  • 1 lemon
  • Mint to garnish
  • 2 cups of plain yoghurt
  • 1 tbsp of thai sweet chilli sauce
  • 1 packet of corn chips

Method

  1. With a knife cut corn from the cob
  2. Chop cucumber, red onions and tomatoes into corn sized pieces
  3. Mash avocado. To the avocado, mix in yoghurt, lemon juice and the thai sweet chilli sauce
  4. In a large bowl, mix together vegetables and avocado mix
  5. Serve as below or refrigerate and use as needed
