Corn Salsa Salad

Ingredients
- 2 small cucumbers
- 2 red onions
- 4 sweetcorn cobs
- 3 tomatoes
- 2 avocadoes
- 1 lemon
- Mint to garnish
- 2 cups of plain yoghurt
- 1 tbsp of thai sweet chilli sauce
- 1 packet of corn chips
Method
- With a knife cut corn from the cob
- Chop cucumber, red onions and tomatoes into corn sized pieces
- Mash avocado. To the avocado, mix in yoghurt, lemon juice and the thai sweet chilli sauce
- In a large bowl, mix together vegetables and avocado mix
- Serve as below or refrigerate and use as needed
