Ingredients
- Half a bag of spinach
- 1 leek
- Cooking oil
- 2 tsp of crushed garlic
- A handful of grated tasty cheese
- A handful of herbs
- 2 tbsp of cream
- 3 eggs
- 1 tbsp of cornmeal flour (or other flour)
Method
- Heat oil in a fry pan and fry leek with 1 tsp of garlic until browned, set aside
- Wilt spinach leaves in 1 tsp of garlic and 1 tbsp of heated cooking oil
- Blend spinach, leek, cheese, herbs and cream together into a smooth paste
- Meanwhile beat eggs for 5 minutes until light yellow and stiff peaks form
- Fold 2/3 of the egg mix together with the blended vegetables
- Scoop into 12 muffin tray holders. Layer on top the extra 1/3 beaten egg
- Bake at 200°C for 15 minutes
- Serve with a dollop of cottage cheese and parsley on top
