Ingredients

  • Half a bag of spinach
  • 1 leek
  • Cooking oil
  • 2 tsp of crushed garlic
  • A handful of grated tasty cheese
  • A handful of herbs
  • 2 tbsp of cream
  • 3 eggs
  • 1 tbsp of cornmeal flour (or other flour)

Method

  1. Heat oil in a fry pan and fry leek with 1 tsp of garlic until browned, set aside
  2. Wilt spinach leaves in 1 tsp of garlic and 1 tbsp of heated cooking oil
  3. Blend spinach, leek, cheese, herbs and cream together into a smooth paste
  4. Meanwhile beat eggs for 5 minutes until light yellow and stiff peaks form
  5. Fold 2/3 of the egg mix together with the blended vegetables
  6. Scoop into 12 muffin tray holders. Layer on top the extra 1/3 beaten egg
  7. Bake at 200°C for 15 minutes
  8. Serve with a dollop of cottage cheese and parsley on top
