  • 1/2 a cauliflower head
  • A handful of sliced olives
  • 1/2 cup of olive oil
  • Juice from 1 lemon
  • 2 tsp of anchovy paste


  1. Cut the cauliflower into little florets
  2. Bring a large pot of water to boil
  3. Add cauliflower and cook for just 2-5 minutes, so it is still crunchy
  4. Drain
  5. Whisk/shake together olive oil, lemon and anchovies to make a vinaigrette dressing
  6. In a serving bowl toss together cauliflower, sliced olives and dressing
  7. Serve,….
The anchovy flavour is quite strong so it is best served with an unflavoured meat
