Cauliflower Carrot Salad

Ingredients

  • 1 head of cauliflower
  • 2 carrots
  • 2-3 stalks of celery (optional)
  • Fresh chives and coriander for garnishing
  • 1 handful of raw cashew nuts
Dressing
  • 1 cup of mayonnaise
  • 1-2 tsp anchovy paste (or crush 2 anchovies in oil)
  • 1 tsp of lemon concentrate
  • 1/2 tsp of dijon mustard

Method

  1. Finely chop cauliflower, carrots, and celery
  2. Make dressing by simply mixing all the ingredients together
  3. Coat the whole salad in the dressing or dollop dressing on top (like photo)
  4. Sprinkle over fresh herbs and cashews
  5. Done, beautiful with poached or oven baked chicken breast
