Carrot and Walnut Salad

Ingredients

  • 4-5 carrots
  • A handful of dates
  • A handful of walnuts
  • 125g feta
  • A sprinkling of cumin seeds
  • Balsamic dressing (2/3 cup olive oil, 1/2 cup balsamic vinegar)

Method

  1. Julienne carrots
  2. Chop dates and walnuts into 1cm sized pieces, roast walnuts (optional)
  3. Toss everything together with dressing and serve
(It’s best 1-2 hrs after being made, or the next day)
