Caramelised Onions

Ingredients

  • 10 onions (I love using red onions, but brown are lovely too)
  • 2 Tbsp of Olive oil
  • 1 Tbsp of brown sugar
  • 2 Tbsp of Red Wine Vinegar (or balsamic vinegar)
  • 1 tsp of salt
  • 1 cucumber
  • 200g of feta cheese

Method

  1. Halve onions and slice into half moons, then finely chop
  2. Meanwhile, heat oil in a large fry pan and fry onions on a low heat for 15 minutes until translucent and just browning
  3. Add brown sugar, salt, Worcester sauce and vinegar and caramelise onions for a further 5 minutes. (Note: because there are so many onions you may have to repeat step 2 twice if your fry pan isn’t large enough. Cook onions until they are tender and soft)
  4. Hot fill onions into a large sterilised jar and store in the fridge
  5. It will last 1 week chilled in the fridge
  6. When you are ready plate and serve as below. Perfect christmas colours!
