Ingredients

  • 1/2 cup chicken stock
  • 300g brussel sprouts chopped into quarters lengthways
  • 1 1/2 cups milk
  • 1 tbsp flour
  • pinch of nutmeg
  • 1 slice of bacon
  • Parmesan
  • 100g Crème Fraiche

Method

  1. Bring chicken stock to the boil
  2. Add brussel sprouts and boil for 5 minutes until stock has nearly evaporated
  3. Dissolve flour in milk and add brussel sprouts with nutmeg, boil for 2-3 mins
  4. Blend in a blender
  5. Mix through crème fraiche
  6. Cut bacon into strips and fry
  7. Top soup with bacon, freshly grated parmesan and serve immediately
