Ingredients
- 1/2 cup chicken stock
- 300g brussel sprouts chopped into quarters lengthways
- 1 1/2 cups milk
- 1 tbsp flour
- pinch of nutmeg
- 1 slice of bacon
- Parmesan
- 100g Crème Fraiche
Method
- Bring chicken stock to the boil
- Add brussel sprouts and boil for 5 minutes until stock has nearly evaporated
- Dissolve flour in milk and add brussel sprouts with nutmeg, boil for 2-3 mins
- Blend in a blender
- Mix through crème fraiche
- Cut bacon into strips and fry
- Top soup with bacon, freshly grated parmesan and serve immediately
