Beef and Bean Burritos

  • 10-12 wraps
  • 1 tbsp of olive oil
  • 1 diced onion
  • 1 tsp of crushed garlic
  • 1/2 a fresh red chilli, finely chopped
  • 3 fresh red tomatoes
  • 500 g of diced beef
  • 1 diced capsicum
  • 140g of tomato paste
  • 1 can of rinsed red kidney beans (400g)
  • A handful of grated cheese, sour cream and fresh salad fr serving
  • 2 tbsp of smoked paprika
  • Salt and black pepper
  • 1 tbsp of dried oregano
  • 1 tsp of cumin
  • 1/2 tsp of coriander powder


  1. Heat olive oil in a large frypan and fry onion until browned (approx 2 min)
  2. Add garlic, chilli and tomatoes and fry for 2-5 mins until tomatoes reduce down
  3. Add diced beef and spices and cook for 10-15 minutes until tender
  4. Add capsicum, tomato paste and kidney beans and fry until heated through
  5. Lay beef and bean mix in the centre of the wrap and fold over
  6. Lay wraps in the baking tray, sprinkle over cheese and fan bake for 1o minutes until wraps have browned and cheese melted
  7. Serve with sour cream, a fresh green salad and fresh oregano.
