Beef and Bean Burritos

Ingredients
- 10-12 wraps
- 1 tbsp of olive oil
- 1 diced onion
- 1 tsp of crushed garlic
- 1/2 a fresh red chilli, finely chopped
- 3 fresh red tomatoes
- 500 g of diced beef
- 1 diced capsicum
- 140g of tomato paste
- 1 can of rinsed red kidney beans (400g)
- A handful of grated cheese, sour cream and fresh salad fr serving
- 2 tbsp of smoked paprika
- Salt and black pepper
- 1 tbsp of dried oregano
- 1 tsp of cumin
- 1/2 tsp of coriander powder
Method
- Heat olive oil in a large frypan and fry onion until browned (approx 2 min)
- Add garlic, chilli and tomatoes and fry for 2-5 mins until tomatoes reduce down
- Add diced beef and spices and cook for 10-15 minutes until tender
- Add capsicum, tomato paste and kidney beans and fry until heated through
- Lay beef and bean mix in the centre of the wrap and fold over
- Lay wraps in the baking tray, sprinkle over cheese and fan bake for 1o minutes until wraps have browned and cheese melted
- Serve with sour cream, a fresh green salad and fresh oregano.
