  • 1 1/2 tsp gelatine
  • 1/6 cup of milk
  • 2 bananas
  • 200ml cream
  • 1/4 cup of sugar


  1. Mix gelatine into milk , set aside, and let dissolve while you prepare the rest
  2. In a pot heat cream and sugar and bring to the boil over medium heat

It will boil up very quickly so remove from the heat immediately when this happens

  1. Blend bananas until smooth (should make 1 cup)
  2. Add gelatine + milk, and bananas, to heated cream and fold through
  3. Pour into ramekins and let cool for 30 minutes on the bench before transferring into the fridge
  4. Leave to set overnight before serving (at least 8 hours)
  5. To remove from containers, use a knife to cut around the side and then sit in a hot water bath for a minute to loosen the base
  6. Tip upside down and serve with maple syrup and roasted walnuts
