Ingredients
- 400g of lean beef mince
- 1-2 tbsp of cooking oil
- 3 cloves of crushed garlic
- 1 onion finely diced
- 1 can of whole peeled tomatoes
- 125g of tomato paste
- 3-4 capsicum finely chopped
- 2 carrots finely chopped
- 1/4 of celery finely diced
- 1 can of kidney beans
- 1 tsp of chilli powder
- 1 tsp of cumin
- 1 tsp of smoked paprika
- 1 tsp of cinnamon
- salt
- 2 tsp of balsamic vinegar
- 3 tsp of culley’s smoked chipotle sauce
- 1 tsp of culley’s no 1 chilli sauce
Method
- Heat oil in a large wok and fry the onion until lightly browned
- when brown add fresh garlic and fry for 1 min, then add chilli powder, cumin and smoked paprika, and fry for 2 mins add more oil if needed and stir continuously
- Add whole peeled tomatoes and reduce for 20-30 minutes until you get a thick paste
- Then add tomato paste and cinnamon
- Add mince and brown off in the tomatoes then add half the capsicum, carrots and celery and cook for 10 minutes
- Add 1 tsp of balsamic vinegar, the culley’s sauce, and 1-2 tsp of salt
- Taste and adjust to your tastes
- Rinse kidney beans, add remaining vegetables and cook for further 2-4 minutes
