Autumn Winter Falafel Salad

  • 2 carrots
  • 1/2 head of cauliflower
  • A dash of olive oil (1 tbsp)
  • A handful of alpha alpha sprouts
  • Baby spinach or mixed lettuce leaf
  • Coriander (optional)
  • Juice from 1 lemon
  • Falafel patties
  • Hummus
  • Haloumi
  • A handful of sesame seeds
  • 1 tbsp of olive oil for frying


  1. Chunky chop carrots and cauliflower, coat in olive oil. Roast at 180°C for 20 mins
  2. In your salad bowl, rinse and lay out alpha alpha sprouts, spinach, and coriander
  3. Prepare your patties and fry in olive oil (2-5 mins per side) set aside
  4. Dice haloumi into small 1-2 cm squares and fry in a hot pan tossing continuously in olive oil until golden brown
  5. Toast sesame seeds in a dry fry pan, tossing continuously until browned (2mins)
  6. Now assemble your salad, (greens, roast veg, falafel, haloumi). Dollop a few spoons of hummus over the salad and sprinkle sesame seeds on top
  7. Squeeze lemon juice over the top and serve!
