Ingredients
- 600g of asparagus (2 bunches)
- 1/2 cup of yoghurt
- 1 tsp of horseradish
- 1 tsp of dried vegetable stock (1 oxo cube or 1 continental stock pot)
- 4 pieces of grilled bacon cut into strips (optional)
Method
- Prepare asparagus by chopping off any hard ends
- Bring a pot of water to the boil and place the asparagus in it to cook, leave the tips resting on the pot top rim to steam rather than boil, like cooking spaghetti
- Cook asparagus for 10 minutes, until soft, remove from the bright green water
- Cut off asparagus tips and set tips aside
- Cut asparagus storks into 2 cm pieces
- Add stock and storks back to the pot with the green asparagus water
- Boil until asparagus is soft and ready to blend (approximately 10 minutes)
- Blend asparagus with 1 cup of liquid in the pot
- Mix through yoghurt and horseradish
- Serve with asparagus tips on top and bacon (optional)
