Artichoke and Cauliflower Soup

Ingredients
- 300g scrubbed artichokes
- 1/3 cauliflower
- 2 peeled agria potatoes
- 1 tsp chcken stock
- 100ml cream
- Pinch nutmeg
- 2 sprigs spring onion
- Favourite white bread (French baguette is ideal)
- Olive oil
- Salt
- Pepper
- Cheese
Method
- In a large pot put artichokes and potatoes on to boil with 1 tsp chicken stock
- Prepare cauliflower (chop), add 10 minutes into the boil
- Boil for 30 minutes in total until all vegetables are cooked
- Meanwhile prepare croutons: cover bread in oil, salt and pepper and grill one side
- Turn over and lightly grill the second side then melt cheese on top
- Blend soup from step 3. add nutmeg, cream and spring onion and mix through
- Serve immediately with cheesy croutons from step 5
