Artichoke and Cauliflower Soup

Ingredients

  • 300g scrubbed artichokes
  • 1/3 cauliflower
  • 2 peeled agria potatoes
  • 1 tsp chcken stock
  • 100ml cream
  • Pinch nutmeg
  • 2 sprigs spring onion
Cheesy croutons
  • Favourite white bread (French baguette is ideal)
  • Olive oil
  • Salt
  • Pepper
  • Cheese

Method

  1. In a large pot put artichokes and potatoes on to boil with 1 tsp chicken stock
  2. Prepare cauliflower (chop), add 10 minutes into the boil
  3. Boil for 30 minutes in total until all vegetables are cooked
  4. Meanwhile prepare croutons: cover bread in oil, salt and pepper and grill one side
  5. Turn over and lightly grill the second side then melt cheese on top
  6. Blend soup from step 3. add nutmeg, cream and spring onion and mix through
  7. Serve immediately with cheesy croutons from step 5
