Apple and Pear Salad

Ingredients

  • 2 apples
  • 2 pears
  • 1/2 cucumber
  • Handful of roasted walnuts
Dressing
  • 2 tbsp of olive oil
  • 1 tbsp of apple cider vinegar
  • 4 tsp of brown sugar
  • 2 tsp of whole grain mustard

Method

  1. Slice apple, cucumber and pear into thin slices
  2. Roast walnuts in a dry pan
  3. Lay sliced fruit and vegetables out on a plate
  4. Prepare dressing by adding all ingredients into a small bowl and whisk with a fork or shake until creamy dressing is formed
  5. Cook pork. If cooking pork tenderloin, sear all sides for 30 seconds and pop into the oven covered in foil to bake for 15 minutes
  6. Slice pork into thin slices and serve over the salad
  7. Drizzle dressing over the pork and sprinkle walnuts on top
