Quick Raw Cauliflower Salad

Cauliflower Salad

What is not to love? This is a quick recipe perfect as a side to chicken. Think modified chicken satay. Takes 10-15 minutes, serves 4-6 as a side.


1/2 head of cauliflower
2 carrots
1 red onion
2-3 tsp of cumin seeds
a handful of cashew nuts
fresh herbs, parsley, coriander or chives

Dressing your favourite pumpkin hummus

Or make your own
3 Tbsp Tahini
1 Tbsp balsamic vinegar


1. Finely dice cauliflower into 0.5cm sized pieces
2. Finely dice red onion and grate carrot
3. Toss everything together in a salad bowl
4. Make dressing by mixing together tahini and balsamic vinegar
5. Stir dressing through the salad
6. Dry fry cumin seeds and cashew nuts
7. Toss seeds and nuts over the salad and green herbs, done
8. Serve with roasted chicken breast, or, whole roast chicken
