Delightfully autumnal, and a lovely way to welcome the pumpkin season. Serves 2 as a main meal or 4 as a side. Prep time 5 minutes, cook time 50 minutes.
1 roasted pumpkin (slice in half and roast for 30-40 minutes at 180C)
2 tsp crushed garlic or 1 head of roasted garlic (squeeze out the centre)
3 Tbsp cream cheese
1 packet of Quinoa Spaghetti
Serve with your favourite green vegetable on top, pick from,
Roasted broccoli (dice, lightly oil and roast for 10 minutes at 180C)
Shredded brussel sprouts fried in butter for 5 minutes
Diced leek fried in butter for 2-3 minutes
a. Roast pumpkin and boil pasta
1. Scoop out pumpkin centres and blend with garlic
2. Mix through cream cheese and add salt to taste
3. Top with green vegetables
4. Serve like below, with either feta or parmesan on top.
