Pear Ginger Cake

Delicious flavours and a lovely dense cake. It lends itself to a moist and delightful gluten free cake. I think one of the best things about this recipe, is that it is a cake like no other you have ever tried. Truely unique and sure to surprise and delight.


3 ripe pears
1/4 cup natural yoghurt
2 cups flour
2 tsp baking powder
1/4 cup coconut sugar
1/4 cup sugar
100g melted butter
3 lightly beaten eggs
1/4 tsp salt
2 Tbsp honey
1 Tbsp crushed ginger


1. Blend pear and yoghurt
2. In a large bowl add flour, baking powder, sugars
3. Mix through butter, eggs, salt, honey and crushed ginger
4. Bake at 180C for 45 minutes
5. Serve dusted with icing sugar, with vanilla icecream or cream fraiche,
mascarpone and/or with baked toffee pears on top.
