The Mexican Platter
Get loads of small bowls and lay out on the table with soft shell tacos so people can make their own amazing Tacos. Here are some ideas for the fillings:
Pre-cooked beef cheek
(A Foodbox product whereby you simply boil in the bag for 10 minutes)
Fry mince in onion for 5-10 minutes until cooked
Vegetarian or vegan alternatives:
Fry an onion in 2 tsp of each paprika and chiptole spices and 1 Tbsp cooking oil. Add sweetcorn kernels from one sweetcorn and from for 1-2 minutes to caramelise the corn. Then add a tin of black beans or red kidney beans along with 125g of tomato paste. Reduce the mix on medium heat (add boiling water if required) for 2-5 minutes until a thick filling forms. Delicious.
Vegetable filling ideas:
Sliced capsicum, or avocado
Finely diced cabbage
Raw grated courgette with lemon juice squeezed over top.
Juice from half a lemon or lime
1 1/2 Tbsp sweet chilli sauce
Blend everything together
If you want to keep the meal gluten free, have large iceberg leaves available to use as wraps.
